INGREDIENTS:

• 1 bottle of Yellowtail Merlot
• 2 cups water
• 1/3 cup Sugar
• 2 Cinnamon Sticks
• Juice of 1 orange
• Juice of 1 Lemon
• 6 Cloves
• 2 Star Anise
• To garnish: 1 lemon and orange wheel

METHOD:

• Place water, sugar, cinnamon into large saucepan
• Add orange and lemon juices, cloves and star anise
• Bring to the boil, then return to a simmer
• Stir until the sugar has dissolved.
• Add 1 bottle of Yellowtail Merlot & heat slowly for 15 minutes.
• Strain, pour into glass and garnish with orange & lemon
