Perfect Pairings - BBQ Beef Ribs & a Bundy

As Australian's we love a good Barbeque, whether it’s a sausage sizzle or a Sunday night steak. These easy to make beef barbeque ribs are a perfect solution to keep you warm and full this winter. When paired with Bundaberg Rum UP it’s a meal everyone will envy. 

Ingredients:

2kgs of beef ribs (per 4 persons)
Marinade (per 2kgs of ribs) a mix of :

  • 1/2 cup malt vinegar
  • 2 tsp toasted & ground Cumin
  • 1/4 cup brown sugar
  • 2 tbsp of maple syrup
  • 1 tbsp of Tabasco
  • 5 cloves of sliced garlic
  • 2 tbsp smoked paprika
  • 1 tbsp of dried oregano
  • Roughly 1 cup of ground corriander
  • 1/4 cup of olive oil
  • 1 tablespoon of white pepper
  • 2 chopped red chillis
  • And finally, a pinch of salt to taste

Method:

  • In a deep tray, place the beef ribs and marniate with the mixture listed above for at least 1 hour - this also brings the ribs to room temperature which is best for cooking. 
  • With the lid on, grill at 175°c on the barbeque for around 30 minutes
  • Keep basting the ribs, flipping the ribs every 5 - 10 minutes.

Once cooked, serve up with Bundaberg Rum UP and Cola over ice:

1. Fill a tall glass with cubes of ice

2. Pour in 30ml of Bundaberg Rum UP and top up with cola.

3. Give some chunky lime wedges a squeeze as they go in.
